KIMCHI is delicious and has SO MANY health benefits as a raw fermented food. Kimchi Adapted from Wild Fermentation Yields: 40 oz 4 Tablespoons of sea salt or kosher salt 4 cups of water 1.5 pounds Napa cabbage 1 daikon radish, thinly sliced in half moons 3 carrots 1 medium yellow onion 4 garlic cloves 2-inch knob of ginger 1 - 2 Tablespoons gochugaru (Korean red chili pepper flakes) 4 green onions, chopped Use a glass jar. We don't use so much red chili. Suit it to your taste.
