Split pea pasta, inspired by fava bean dip for under 50p per portion!
Serves 4 300g pasta of choice 200g yellow split peas 1 tsp cumin 1 lemon 1 clove garlic 2 tbsp extra virgin olive oil Pinch sumac (optional) Salt & pepper Start by cooking the split peas to package instructions, I left mine to simmer in plenty of salted water on low for 45 minutes. when soft, drain them fully and leave to cool. Add them to a food processor along with the zest and juice of the whole lemon, cumin, garlic, olive oil and a generous amount of seasoning. Blitz until smooth & taste for seasoning. If pairing with pasta, cook the pasta to package instructions and reserve a mugful of pasta water. Combine the pasta with the fava dip, along with enough pasta water to make the sauce glossy. Serve with extra olive oil, lots of black pepper and sumac (if using). By @ellysplate
