Roasted Vegetable Panini with Pesto Ingredients 3 bell peppers (I use 2 red, 1 orange) 1 onion, 8 oz. mushrooms, sliced, Asparagus, Shredded mozzarella, Feta, Pesto, Olive oil, Kosher salt Italian bread (2 slices per sandwich) Bake veggies w/ olive oil and kosher salt at 425F. Roast for 25-30 minutes. Layer toppings and cook each side 5-8 minutes on medium heat (skillet or grill).
