Roasted Beet & Goat Cheese Log  Ingredients: - 8 ounces goat cheese, softened - 1/2 cup roasted beets, peeled and finely grated - 1 tablespoon honey - 1/4 teaspoon black pepper - 1/4 teaspoon garlic powder - 1/4 cup fresh parsley, chopped - 1/4 cup pistachios, chopped - 1 tablespoon olive oil (for roasting the beets) Directions: 1. Roast the Beets: - Preheat oven to 400°F (200°C). - Wash the beets and coat them with olive oil. Wrap each beet in aluminum foil and roast for 45-60 minutes until tender. - Once cooled, peel and grate the beets finely. 2. Make the Cheese Mixture: - In a mixing bowl, combine the softened goat cheese, grated beets, honey, black pepper, and garlic powder. Mix until smooth and well-combined. 3. Shape the Log: - Lay
