Do you know the difference between our Ripe and Ready and Traditional cheeses? In case you don't... The Ripe and Ready cheeses are stabilised products that do not need ripening before eating. They are mild in flavour and firm in texture. The Traditional cheeses need further ripening (the ripeness indicator on the side of the box gives an indication of how ripe the product is at the time of purchase) but boast fuller flavours and softer textures once ripe.
