Perfect for a quick no-heat lunch! pasta salad, Thai food, Thai recipices, vegan Thai recipes, gluten free Thai recipes, easy lunch idea, healthy lunch to make, weekday lunch idea  Ingredients:  Veggies:  10 oz chickpea pasta  1 chopped bell pepper  1 cup chopped cucumber  1/2 cup shredded carrots  1/3 cup green onions, diced  1 cup chopped cabbage  Sauce:  1/2 cup peanut butter  1 tbsp maple syrup  1 tsp apple cider vinegar  1 tbsp coconut aminos or soy sauce  1/4 cup water  Instructions:  Cook the noodles according to package instructions.
