Malcolm Regisford on Instagram: "SMOKY MUSHROOM BURRITIO INGREDIENTS: Tortilla Rice Avocado 12 oz oyster mushrooms 2 tsp cumin 2 tsp smoked paprika 1 tsp hot chili powder 1 tsp oregano 1 tsp garlic granules 1 tsp maple syrup 4 tbsp coconut aminos 2 tbsp tomato paste 2 tsp each salt and pepper 2 small Yukon gold potatoes For Collard Cabbage Slaw 3 collard green leaves 3 cups of shredded cabbage Vegan Mayo 3 tsp lemon pepper seasoning 2 tbs avocado oil Squeeze of lemon INSTRUCTIONS In a medium mixing bowl add in all mushroom marinade ingredients and mix to combine. Drop in your oyster mushroom clusters and toss to fully coat. Set aside for at least 20 mins. Malcolm Regisford on Instagram: "LENTIL SMASHBURGER TACO INGREDIENTS: 1 Can of Lentils, drained and rinsed 1/2 of an Onion 1/4 of a Red Bell Pepper 4-5 White Mushrooms 1/2Cup of Gluten-Free Oats 2 tbs of Ketchup 1 tsp each: Salt Pepper Smoked paprika Dried thyme Garlic powder Onion powder Nutritional yeast Tortillas Burger sauce 1/3 cup vegan mayo 3 tbs ketchup 1 tbs mustard 2 tbs sweet relish Squeeze of lemon INSTRUCTIONS Add your peppers, onions and mushroom to a food processor. Pulse until all is roughly chopped and around the same size. Sauté this mixture in a pan over medium heat until most of the moisture has cooked out (optionally sprinkle salt to draw out more water). Remove from pan and set aside. In a small food processor add the oats and spice and blend until roughly combined
