Beef mince is always on my shopping list and I'm always looking for new ways to cook with it - so I don't have to make spaghetti bolognese on repeat 😅 I thought I'd start with one of my favourites - a really quick cheat's beef biryani, using pouches of microwave rice! I've written up the recipe below and I'll share the others over the next two days - so make sure you save and follow! A x Feeds 4 Red onion, finely chopped Red pepper cut into small cubes Oil for frying 500g beef mince 2 cloves garlic finely chopped 2 tbsp garam masala 1 tsp ground cumin 1 tsp chilli powder 2 tsp brown sugar 2 tbsp tomato puree 400g tin of cherry tomatoes

Ingredients
1 cup of pilau rice washed and drained
1.5 cups of veg stock
30g of butter
1 cinnamon stick
3 cardamom pods
3 cloves
1 bay leaf
1 tsp cumin seeds
1 onion thinly sliced
1 clove of garlic
Pinch of safron
1/2 tsp ground coriander
1/2 tsp ground turmeric

Method
1. Wash and rince the rice and set aside to drain. In the meantime melt the butter over medium-low heat and cook the onion for 5-6 minutes until soft. Add the garlic , bay leaf and whole spices(everything except turmeric and coriander) and cook for another two minutes before stieeing in the turmeric and corinader. Cook for another minute
2. Add the rice to the pan and stir to coat, then pour the stock over it. Turn up the heat, put the lid on the pan and bring to Rice, Pilau Rice, Ground Turmeric, Tsp, Spices, Cook
