QUICK PEANUT TOFU 🥜 by eatmoregreens This is one of my go-to tofu recipes and a family favorite! 😮💨 Much love Maya ✨ RECIPE (4 servings, 30min prep time): -400g tofu Pat dry and tear in chunks -3 big Tbsp peanut butter -juice of 1 lime -salt to taste -1/2 Tsp each chili powder, ginger powder and garlic powder -2 Tbsp soy sauce Mix and stir in the tofu. Spread on a lined baking tray and generously drizzle with agave or maple syrup. Bake at 175C/350F for 25min.

1hr 30min · 1 serving -400g (2 blocks) firm tofu • Pat fry it and score it diagonally as shown in the video. • -2 Tbsp soy sauce • -1 Tsp smoked paprika • Add it to the tofu that it’s fully coated with the mix. • Bake at 190C/375F for 50-60mins. • Glaze: • -4 minced cloves of garlic • Fry in some oil • -1/4 cup (50g) brown sugar • -1 Tbsp mustard • -2 Tbsp water • -salt to taste • Pour it over the tofu and bake for another 10mins.

SHREDDED TOFU TACOS 🌮
RECIPE (3-4 servings, 45min prep time): -400g firm tofu Pat dry it and shred with a grater. -2 Tbsp soy sauce -1 Tbsp oil -2 Tsp cumin -1 Tsp Paprika -salt to taste Toss around, spread on a baking sheet and bake at 350F/175C for 30mins (give it a stir every now and then). Sauce: -1 onion -3 cloves garlic Fry in some oil until softened. -1 Tsp cumin -1 Tsp Paprika -1/2 Tsp chili powder -2 Tbsp tomato paste Roast 2-3mins -1/3 cup (80ml) pineapple juice -1/2 Tbsp soy sauce Stir it in and bring to a bubble. Then reduce the heat and stir in the baked tofu. “Salsa verde”: -a bunch cilantro or parsley -2 cloves garlic -4 Tbsp vegan yogurt -4 Tbsp vegan mayo -1/2 lemon -1 Tsp cumin -1 Tsp agave -salt to taste Blend until smooth.
