550g Double/Heavy Cream
1 Vanilla Pod/1 Tsp Vanilla Paste
3g Powdered Gelatin (200-250 Bloom) + 18g Cold Water
70g Light Brown Sugar
Pinch Sea Salt

1. Bloom the gelatin and water.
2. Heat the cream and vanilla, until it’s steaming. Set it aside but make sure its still hot when you use it.
3. Add the sugar to a pan and make a dry caramel (you’re almost just melting the sugar then cooking it for a minute longer, that will be Dry Caramel, Matt Adlard, Brown Butter Cake, Caramel Whipped Cream, Brown Sugar Caramel, Vanilla Pod, Vanilla Paste, Chocolate Fondant, Vanilla Cream

A helpful little guide on American, Swiss & French buttercream (ignore me I didn’t mean to say French meringue buttercream😅) Now..I caused some controversy adding in vinegar to the American buttercream so you’ll have to let me know if I’m crazy or not 🤣 These are pretty “classic” recipes but once you’ve mastered them you can absolutely play around with rations and flavours etc! What buttercream should I try next that I missed??  Recipe:  American Buttercream 200g Unsalted Butter, Soft 400g Powdered/Icing Sugar 2-3 Tbsp Milk Vanilla + Salt To Taste About 1/2 Tsp White Vinegar  1. Beat the butter for 3m. 2. Add half the sugar and beat for another 3m. 3. Add in the remaining sugar along with the milk and beat on a medium speed until smooth.
