BRENDAN PANG on Instagram: "SPRING ONION PANCAKES 🌱 also known as “cong you bing” is a delicious Chinese street food snack that’s crispy, flaky, and loaded with the fresh, aromatic flavour of spring onions. - 400g plain flour - 200ml water - 1/2 tsp salt - 1 cup chopped spring onion - Sesame oil, to brush - Vegetable oil, to cook To make the dough, combine flour and salt in a bowl. Slowly mix in water then bring together with your hands. Turn onto a work surface and knead until smooth and elastic, about 10 minutes. Cover with cling wrap and rest for 30 minutes. Divide dough into 4 pieces then roll out thinly, using a little extra flour if needed for dusting. Brush each disk with a little sesame oil (or neutral oil), sprinkle with spring onion and a little salt.
