I will be honest: I debated whether to talk about what is going on here. Some people use Instagram for different things. Sometimes people want escapism. Oh to sit in a restaurant and have a drink at lunch time. The sheer, toe curling pleasure of it all. ⁣ ⁣ I will never take this for granted. ⁣ ⁣ I hold a few drinks very close to my heart. A dedicated rum drinker (dark, aged and never spiced). You will often see me clutching a Mai Tai or Cuba Libre. ⁣ ⁣ Yet my go to aperitif is, very often, an Aperol Spritz. ⁣ ⁣ The aromatic orange, the dry prosecco, the refreshing soda. It’s a perfect long drink to start before lunch. Or after work. Or brunch.

Waste not, want not. How do you use up vegetables in your house?⁣ ⁣ Switching more to a plant-based diet means I am now elbow deep in an obscure collection of fruits, vegetables, provisions, legumes and pretty much anything else that comes from the ground. ⁣ ⁣ For someone who loves cooking, it is a great challenge to try to make dishes and re-build skills outside of the (insert pasta here) model. ⁣ ⁣ A pair of lonely sweet potatoes wanted more than an obvious fate of baking, wedges or mash. ⁣ ⁣

So, this is a mess. ⁣ ⁣ Mrs EatGoSee wanted me to make a cake. I haven’t made cake since the world was black and white but, on this Friday morning, I threw myself towards the challenge. ⁣ ⁣ A stout chocolate sponge cake layered with dulce de leche buttercream and a chocolate ganache. My weekends are busy cooking and writing recipes with pantry staples.⁣ ⁣ This weekend highlights chickpeas like these bad boys seasoned, bathed in olive oil and dusted with cumin, turmeric, oregano and lemon zest. ⁣ ⁣ These are roasted for 20-25 minutes until crunchy.
