Baked Zucchini Chips
Zucchini Chips - these were great when I ate them right away, and actually pretty quick to make, once I got the thin slices cut. I cut the whole zuchinni and battered them. 1 zuchinni ended up making 4 servings for me, so I refrigerated the 3/4 uncooked but breaded between layers of paper towels in a tupperware. The next 3 servings were super fast!
