Slice into thin rounds with a sharp knife, removing any pips, and arrange on a plate. Add beets, feta, onion and chives. Meanwhile, whisk olive oil with honey Season dressing to taste with salt and pepper. Combine with the vegetables and mix well. Top with spinach leaves.
