This is actually one of my cookbook recipes—it’s super simple, and literally done in less than 10 mins. Also—sharing my favorite way to cut up a watermelon without making a huge mess! Follow @starinfinitefood for more. • • SALAD: 1/2 teaspoon salt, 1/2 teaspoon paprika, 1/4 teaspoon pepper, 1 tablespoon lime juice, 1 tablespoon coconut aminos (optional), 1 teaspoon honey, 5 cups watermelon (chopped into small uniform cubes), 2 medium avocado (chopped into cubes), 1 English cucumber (quartered then chopped), 1/2 jalapeño (minced), 1 large scallion, chopped, 2 tablespoon cilantro (minced), 1 tablespoon mint (minced) • >> 1️⃣ In a small bowl mix together the salt, pepper and paprika. Set aside. 2️⃣ In a separate small bowl, mix together the lime juice, coconut aminos and honey. Set aside. 3️⃣ Add watermelon, avocado, cucumber, scallion, cilantro and mint to a large bowl.
