CARROT GNOCCHI 🥕
35min · 3 servings Recipe: • -1 lb (455g) carrots, peeled and chopped • Cook in water until soft, then mash either by hand or with a blender (gives a better and smoother result) • -2 to 2 1/4 cups (260-290g) flour • -a pinch of salt • Add to the carrot mash and knead until you get a dough ball. • On a floured surface cut in 4, roll into snakes and cut into big or small gnocchi. • Boil in salted water until they start floating to the top (~3mins). • Serve with your favorite sauce e.g. pesto.
