Fresh Herb and Tofu Curry Recipe.  I didn't have bok choy (which I do love) or fresh herbs, so I used a bag of soy beans instead.  I also added a lot of grated fresh ginger with the garlic, and bay leaves instead of curry.  I had no bamboo shoots, so I skipped.  Also, I don't like the after taste of fish sauce, so I used a lightly flavored soy instead.
