45min · 8 servings Ingredients • 2 lb Carrot's • 1 Onion • 3 Garlic cloves • 2 tbsp Minced ginger • 2 tbsp Minced lemongrass • 2 tsp Red curry paste (or yellow if you would like to keep it vegan) feel free to add more to if you want it spicy • 1 1/4 tbsp Brown sugar • 1 fl oz Coconut or favorite oil • 13 1/2 fl oz Or 1 can coconut milk • 3 cup Chicken or vegetable stock • Plain yogurt for serving • Chiffonade basil for serving • Salt to taste
