RAW CHOCOLATE CHIP PB ICE CREAM OVER CHIA PUDDING INGREDIENTS FOR CHIA PUDDING ½ cup non-dairy milk 2 tbsp. Chia seeds ½ tbsp. almond butter Combine the above ingredients, place in a jar and refrigerate overnight or at least 2 hours. FOR CHOCOLATE PB ICE CREAM 2 frozen bananas ¼ cup non-dairy milk 2 tbsp. peanut butter 1 tbsp. raw cacao 1-2 tbsp. non-dairy mini chocolate chips (I use Enjoy Life Semi-Sweet Chocolate Mini Chips) Chop the frozen bananas and add to a food processor. Pulse until bananas are broken up then add non-dairy milk, peanut butter and raw cacao. Blend until creamy. Remove blade attachment and fold in non-dairy chocolate chips. Top the Chocolate PB ice cream over chia pudding and serve immediately.
