Ingredients: 2 servings udon 2 tbsp smooth peanut butter 1.5 tbsp soy sauce Splash of dark soy sauce, for colour 1.5 tsp sugar 2 tsp toasted sesame oil 1 tsp chilli crisp/oil, or more to taste 1 heaped tsp grated ginger 1 clove garlic, finely chopped Method: 1. Cook the noodles according to packet instructions. Drain and reserve 1/4 cup of the water. Give noodles a quick rinse with cold water to prevent sticking then set aside. 2. In a bowl, combine all of your sauce ingredients and mix well. Slowly add in the reserved water 1 tbsp at a time to thin out the sauce. 3. Add in the cooked udon and mix well until evenly coated. 4.
