Mexican Corn Salad

A Can't-Stop-Eating-It delicious way to serve corn, this is a giant salad form of the famous Mexican Street food Esquites, a corn salad sold in cups that you can eat as you wander the streets! I love the way the creamy lime dressing melts into the hot corn as you toss it all together.I urge you to use fresh corn if you can, but this is still super made with frozen corn. Wonderful side dish, especially for Mexican or South Western themed menus!
Lentil and Roasted Eggplant Salad

Greek Chicken Gyros recipe
Recipe video above. The marinade for the chicken is so sensational that I use it even when I'm not making Gyros! This is fantastic for entertaining because you can just lay it all out for guests to help themselves. The smell when the chicken is cooking is incredible - you can really smell the oregano and garlic!
Tiramisu (Chef recipe!)
Recipe video above. You will be amazed how silky rich and yet LIGHT this Tiramisu tastes! This is slightly adapted from this recipe by Vanessa Martin, a well regarded Australian-Italian chef. This is a traditional recipe made using raw eggs that are not cooked or tempered, and with only mascarpone - no cream! You just can't achieve the same mouthfeel if you use normal cream. :) (Read in post or note about raw egg concerns)
Cheesy Italian Arancini Balls
A classic Italian dish, I've made these bite size to be finger food but they are typically made larger to serve as a meal or appetiser! This makes 25 mini Arancini balls about the size of a golf ball. :) Great for making ahead - they keep in the fridge for 3 days, then just reheat at 350F/180C for 10 minutes!

It's a fast way to turn bland beans into a really filling soup that so simple to make, yet so, so good! Greek Zucchini Tots (Mini Fritters)
These tasty bites are from the Greek Island of Alonnisos. They are so versatile - one of those recipes you can have for breakfast, lunch, dinner OR serve as appetisers at a party! I like to make them in the oven and shape them into tater-tot (potato gem) shapes. But you can cook them on the stove too, and as for shape, you're only limited by your imagination!! This makes around 35 to 40 tots.
