Ranch Potato Salad Ingredients: 2 lbs baby potatoes, cut into bite-sized pieces ½ cup ranch dressing ¼ cup mayonnaise 1 tbsp Dijon mustard 1 tsp apple cider vinegar ½ cup chopped celery ¼ cup chopped red onion ¼ cup chopped fresh parsley Salt and pepper, to taste Optional: crumbled bacon, for garnish Instructions: Boil potatoes until tender, about 10-12 mins. Drain and let cool. Mix ranch, mayonnaise, mustard, and vinegar. Add potatoes, celery, onion, and parsley. Toss to coat. Season with salt and pepper. Chill before serving.
