Double-Portobello Burgers with Roasted Tomatoes~ okay maybe I would just do a single! Roasted plum tomatoes are the "ketchup" for these vegetarian burgers. Melted sharp provolone between the mushrooms delivers the oozy cheese factor.
Added some extra chili powder and fresh diced jalapeño to the chicken mix because it didn't have quite enough heat for our tastes, and used a little extra cheese throughout. Even the picky boyfriend loved it!
